BBQ is kind if a big deal in the South, and you could probably call it a sport in Texas! But, if you’re like our family and you don’t have hours upon hours to slow cook and babysit meat on the grill to get it just right, you need a quick and easy alternative. I present: BBQ Chicken Taquitos!
This recipe is seriously so easy that your husbands can do it…. no offense Derrick. 😉 So here we go:
Ingredients:
6 frozen chicken tenders or 3 frozen chicken breasts
6 to 12 tortillas (we used large wheat and got 6 taquitos, but use small ones to make about 10 to 12)
Your choice of BBQ sauce (we used KC Masterpiece Southern Style)
Garlic powder
Salt and pepper
Cilantro
Non-stick cooking spray
Directions:
First boil your chicken. You can do this the night before you plan to make it, or about 45 minutes to an hour before dinner. This is the only actual cooking you do. The rest takes about 15 minutes.
Preheat your oven to 400 degrees and spray a cookie sheet with non-stick cooking spray. Shred the chicken and place in a skillet. Add the salt, pepper and garlic powder (I don’t measure, I just sprinkle liberally.) and then the BBQ sauce. Mix well. Add cilantro. Scoop chicken into tortillas and roll. Place folded side down on cookie sheet and spray very lightly with the cooking spray. Bake for 10 to 15 minutes until golden brown. (This step keeps your tortillas from coming unrolled and falling apart.) Serve alone or with brown rice and black beans or chips and salsa.
There you have it. Quick and Easy BBQ Chicken Taquitos!
